Cinnamon Teacake

Baking is always so much more fun when you have a fairy princess around to help with the mixing. Sometimes on the days I have my granddaughter, Gabriella, we like to tie on our aprons and see what kind of a mess we can make together. This week's choice was a simple little one layer cake that is easy to make and oh ~ so ~ yummy. A good cup of tea and a pretty cake plate is always in order too.

Cinnamon Teacake

1/2 c. Butter, softened
1 c. Sugar
2 Eggs, lightly beaten
1 T. Vanilla
1/2 C. All Purpose Flour
1 1/2 C. Self ~ Rising Flour
1 C. Buttermilk

Topping

3/4 to 1 stick Butter, melted
Cinnamon & Sugar mixture

Preheat oven to 350 degrees F. Grease a 9" round springform pan. Cream butter & sugar til fluffy. Gradually add eggs & vanilla. Fold in sifted flours by hand alternately with buttermilk. Stir until smooth.
Bake for 35 ~ 40 minutes, or until a toothpick comes out clean. Leave in pan for 5 minutes. Turn upside down on cake plate and brush entire surface with melted butter. Sprinkle liberally with cinnamon & sugar mixture. Enjoy while warm!

*WARNING this in NOT a low fat recipe. It's a pure pleasure one!

  3. Gabby is a girl after Grammy's own heart. She was born ready for a tea party! We have them all the time. She knows where to go to get her own special tea cup out of my china cabinet and asks me to make her tea every time she is here. Her favorite is herbal peppermint. I like the black stuff, but don't want to buzz up a 4 1/2 year old on caffeine {I leave that to the sugar!}.

  5. Yes ~ we must grab every moment. At this point we realize just how fast they grow up. It was just yesterday that her mommy was standing on a stool next to me.
